Get into the festive spirit by whipping up Kane Pollard’s Christmas spiced martini – a favourite to share with friends at this special time of year.
Christmas spiced martini
makes 2
for spiced syrup
300ml water
10g star anise
10g cinnamon
5g cloves
150g brown sugar
100g honey
Place water and spices in a pot, bring to the boil and allow to simmer for 15 minutes. Add sugar and honey to the pot, bring to the boil and simmer for another 15 minutes, stirring, and set aside in the fridge to chill.
for the martini
100ml chilled spiced syrup
75ml good local vodka
75ml Frangelico
50ml fresh espresso coffee
1g cinnamon powder to garnish
1g nutmeg powder to garnish
Fill a cocktail shaker with ice. Add syrup, vodka, Frangelico, coffee and shake vigorously until the mixture is foamy and well chilled. Strain and serve immediately, dust lightly with cinnamon and nutmeg powder to garnish.
