Meat lovers rejoice: Sarrie’s Smokehouse arrives at popular CBD pub

Patrons can expect a meat oasis – with a range of options for vegetarians as well – as Sarrie’s Smokehouse fires up at the Saracens Head Hotel.

The Saracens Head Hotel – a venue that dates back to 1873 and now owned by Duxton Pubs – has introduced a new form of dining to the otherwise traditional pub menu.

Sarrie’s Smokehouse – which is a menu cooked entirely from the “new toy in the playhouse”, the smoker – went live last weekend, bringing a range of different meats to the Saracens Head Hotel patrons.

Executive chef of Duxton Pubs Brendan Boothroyd says this began as a “passion project”.

“Smoking meats is a bit of a passion of mine and has been for a while. It’s just a great opportunity for us to get some of those flavours, and the exciting sides of doing smoked meats,” he says.

“We’ve only just scratched the surface really of what we want to do.”

Brendon says while they’re introducing this new range, the team is “really conscious of not losing the essence of what a pub is as well”.

“A pub is a local meeting place. It’s where people go for their knockoff drinks or their Tuesday night parmy,” he says.

“We want to still have a place where all the people who live and work locally can still come as a meeting place, but then offer a new dimension to what they can have in the sense of what we do from the smoker.”

Brendan says this is an “extension of the food offering”, where patrons can either order from the classics or the Sarrie’s Smokehouse menu which is available whenever the kitchen is open.

The menu ranges from options like pastrami pork rib, an Alabama white sauce smoked chicken, pulled pork, burgers, a mushroom XO cauliflower, and more, all cooked by the smoker.

“That’s our starting base, and you’ll be able to come in and pick and select three proteins and add two sides and make a board,” he says.

“Or you can choose your own adventure – whichever way you want to go.

“We’re not trying to pigeonhole anybody. You can come and just have a piece of brisket if you want and some chips and that’s fine.

“We also want big groups to come in and eat everything.”

Brendon says they’ll be continuing their relationship with Maurya station – renowned and long-time beef supplier of the Saracens Head Hotel – by highlighting their produce on the menu.

“It’s obviously a fantastic product, and a South Australian product as well. It’s world-renowned. It’s a little bit hard to get your hands on, to be honest, because the Japanese market grab it all straight away,” he says.

“They do a burger, which is, in my mind, one of the only wagyu burgers I’ve had that actually tastes like wagyu. So it’s a fantastic product.”

Sarrie’s Smokehouse is available at the Saracens Head Hotel at 82 Carrington Street, Adelaide. It’s open from Monday to Friday from 11:am until late, then Saturday from 3pm until late.
