New CBD café Sway values beats and brews

A new café from a local DJ has opened on Pulteney Street, spinning specialty coffee and a groovy soundtrack.

Sway is a new café from Declan Huston, who DJs clubs and events as ‘On the Decs’, and found his hospo groove at Abbots and Kinney and Cotto.

Declan said he loves the culture of coffee and music and how they both have the power to set the tone of someone’s day.

“You’re doing something that people love, you’re being part of their day or night,” he says.

“With the DJing, the music has got to be great, the coffee, it’s got to be great. Otherwise, their day is ruined and being a part of people’s day, I sort of live for it.”

Ona is an award-winning Australian brew that started in 2008.

Sway is brewing Ona Coffee, a Canberra-based roaster that’s taken off in Melbourne and growing its supporters in Adelaide.

Declan says Ona is “a bit of a higher-end coffee” and their award-winning Raspberry Candy milk-based roast, which has a sweet berry and creamy white chocolate flavour profile, is an “iconic” blend.

While a full food menu is still in the works (it’ll be grab-and-go, focaccias, toasties, bagels and wraps), Sway serve Prove Patisserie for a sweet fix.

“Anna and Megan [from Prove], they’re pretty spot on with their recipes, and what they offer is what you get so, plain, chocolate, almond, some brownies, cookies for now,” Declan says.

The Pulteney Street spot is slightly tucked away on the ground floor of Naylor House, with plenty of greenery and natural light welcoming in the foot traffic.

Inside Sway.

The surrounding precinct has plenty of other food offerings already, but that doesn’t deter Declan.

“I’d like to create a little community where people come in here and hopefully we have something that they like, but if we don’t, I can point them in the right direction to all the businesses around the area,” he says.

As for the soundtrack, you can expect a “café appropriate” playlist to make you sway.

Declan says he’s keen to play more from local artists because he knows Adelaide has a thriving music production scene, which tends to crossover with the hospo world.

“I’m very much about the music and how music and food come together,” Declan says.

“I want to play music that makes you want to drink coffee and eat pastry.”

Artists like Kaytranada, Mac Miller, Tom Misch and FKJ are just some of the artists Declan names, along with local producers like Motez and Luke Million.

Ultimately, Declan wants Sway to be part of your daily routine.

“My goal is really good coffee, a nice menu, and a little hub for people to come and hang out, not feel like they have to leave if they come in, or not feel like they have to stay for ages, we just become part of their day.”
